Pumpkin Raisin Chocolate Cookies = DELICIOUS!

IMG_0281So yea, it’s not always about photos here. Sometimes I may share an adventure, other times some randomness or in certain instances, like this one… A recipe that I love and have made for the past three years in a row now…

Pumpkin Raisin Cookies… At least that’s how they began. I now add miniature chocolate chips to them too. And you can always substitute the raisins. For instance one time, I made them with chopped apples that I had coated in cinnamon. Another time I added chopped nuts. There’s so much you can do so outside if the “normal” recipe below. Play around a bit…

I love these cookies because they’re soft and almost cake like. Or maybe what a muffin would be if it weren’t in a muffin tin. Heck, maybe I’ll make them this week and use muffin tins to see how they come out. Either way, they’re delicious, not over the top sweet, but sweet enough. Not bland at all, but not so many flavors that your tastebuds are having a rave. They’re really, well… Just perfect fall treats… So, with out further ado….

  • Preheat oven to 350
  • Cream shortening and sugar till smooth
    • Add egg, vanilla and mix till fluffy
      • Stir in pumpkin
  • Sift flour / baking soda / salt / pumpkin pie spice & cinnamon
  • Stir flour mixture into pumpkin mix
  • Add raisins (and MINI chocolate chips if you want) or apples and or nuts or anything else you can think of
  • Place heaping tablespoons at least 2 inches apart and bake for 10-12 minutes until edges are brown.

For icing, I have used a basic confectioners sugar icing and drizzled over once cool. Or this last time around, I also used Stonewall Kitchens Sea Salt Caramel Sauce which was DELICIOUS!!!

INGREDIENTS:

  • 1/2 Cup ShorteningIMG_0279
  • 1 Cup Packed Brown Sugar
  • 1 Large Egg
  • 1 Teaspoon Vanilla
  • 1 Cup Pure Pumpkin Puree
  • 2 Cups Flour
  • 1 Teaspoon Baking Soda
  • 1/4 Teaspoon Salt
  • 2 1/2 Teaspoons Pumpkin Pie Spice
  • 1 Teaspoon Cinnamon
  • 1 Cup Raisins

And boom… You now have a fanTABulous fall treat that you will enjoy, kids will eat up and it will be like ghosts and goblins came and stole them off the place because they will NOT last long.
